Stack plate.  I probably ate a version of this week’s food video dish at least 3 times a month while I was growing up and my kids have eaten it countless times over the years. None of us seem to have gotten tired of it.  I’ve swapped out my spice blend of paprika, garlic powder, cumin seed and chili powder for the taco seasoning that my mother used, but for the most part this is the same dish that I grew up with.

Food can be a powerful connector. Sharing a meal with people that you care about is wonderful. Preparing a meal together can be something that you remember for years.  My kids still talk about some of the meals that we’ve made together over the years.

What are some of your family food traditions?

Ingredients:

2 lbs. lean ground beef

1-2 tsp. sweet smoked paprika

1-2 tsp Mexican oregano - you can also use regular oregano

1-2 tsp. garlic powder

1-2 tsp. cumin seed

1-2 tsp. chili powder

Toppings:

Lettuce

Sliced cherry tomatoes or diced tomato

1-2 cups grated cheese for topping

Chopped cilantro

Avocado

4-5 green onions chopped

Corn tortilla chips preferably organic or non-gmo

Sour cream or plain yogurt

Rice

Salsa

Brown the ground beef in a large skillet and add the cumin seeds, oregano, paprika, garlic powder and chili powder. Cook beef until it’s no longer pink. Drain any excess grease.

I start with a layer of tortilla chips and you can break them up or leave them whole. Then add some rice followed by ground beef, cheese, lettuce, tomatoes, cilantro, green onions, sour cream or plain yogurt, salsa and top it with avocado slices.

This is another opportunity to play with your food, so customize it to suit your taste.
